A-mazing Soup

Well I just died and went to heaven and had to come back and tell you all about it!  I made an amazing tomato bisque!

I  am a huge tomatoes bisque fan!  I order it faithfully at one of my favorite restaurants called Famoso.  I never dreamed I would have a worthy comparison recipe... But today I was happily surprised!  Like I said in my last post I was given a flexitarian cook book and have been sampling all sorts of recipes from it!  Today was Spicy Tomato Bisque! This soup is seriously 'da bomb'

But don't don't listen to me, try it for yourself!

Spicy Tomato Bisque

Ingredients

12 plum tomatoes
1 small onion chopped largely
6 cloves of garlic
1 teaspoon red pepper flakes
1/4 teaspoon black pepper
2 tbs olive oil
1/4 tsp cumin
3/4 tsp salt
1 pinch nutmeg
1 1/4 cup cream ( milk can be used)
2 tbs fresh basil
1 tsp red wine vinegar or balsamic
A scoop of feta or ricotta or tofu

Directions
1) Preheat oven to 450
2) Chop tomatoes into quarters and spread them in baking dish. Drizzle with olive oil and add onion garlic and spices ( except basil &vinegar) stir to make sure everything is coated. Bake for 1 hour
3) blend seasoned tomatoes with remaining ingredients in blender or food processor.
4) heat over stove on high for 2 min. Pour into bowls top with favorite cheese and some fresh basil...and enjoy one of my favorite foods!

    1. Oh yes...grilled cheese would be awesome with this! I had mine with salad! I love soup all year round! But I will def be making it come fall! HOw are you doing Carly?
